All About: EGGS

Eggs are a great place to start when striving for a healthier diet, says our guest blogger and professional cook Chloë Velounias.

They are full of protein and vitamins, and you can mix up your cooking methods so you never run out of ways to enjoy them! Here are some fast facts and quick tips on how to stay healthy with eggs from the fantastic Chloë.

Health benefits

Eggs contain folate, iodine and various vitamins including D for healthy teeth and bones, and A to boost your immune system. Your body needs protein to grow and repair - eggs are a brilliant way to get it, especially if you lead a vegetarian diet.

Myth-buster!

I was once told that you couldn't have more than six egg yolks in a week! Whilst it's true that eggs contain cholesterol, if you check out the NHS advice on eggs it'll tell you that it's the saturated fats in our food that will affect our blood cholesterol more than the cholesterol we take on through eating eggs. So rather than denying yourself that seventh egg of the week, just enjoy it as part of a balanced lifestyle.

Breakfast, lunch and dinner 

Steph recently blogged about her first healthy eating week of 2018; if you're looking to stay healthy throughout the week too then eggs can play a key role. Try some scrambled eggs on seeded or wholegrain toast for breakfast - I like to add chilli or hot sauce to mine. Boiled eggs can spruce up a mid-week salad lunch; go Niçoise and add tuna, olives and green beans, or Caesar with Jamie Oliver's healthier Caesar dressing.

Shakshuka is usually a brunch dish, but it makes a nutritional and delicious evening meal full of veg and spices. Some versions I like are Yotam Ottolenghi's and Jamie's green shakshuka but you can use these for inspiration and make it your own!

Egg-free and free-range 

We are becoming more and more conscious of animal welfare which is brilliant; I only buy free-range eggs and the great news is that most supermarkets now stock boxes of multi-size free-range eggs for a lower price. If you live a vegan lifestyle, egg substitutes are now available. I for one want to try them out - stay tuned for a review in a future post!

Fast flavour boosts - Worcestershire sauce, Tabasco/hot sauce, chilli flakes
Top tip - season eggs towards the end (if scrambling) or after cooking for best taste
Swap it - switch butter for olive oil and cream for milk when scrambling
Eggsperiment (last one, promise) - try dainty quail eggs in a salad or rich duck eggs on top of a vegetable hash
Bake it - eggs can also be transformed into delicious healthy baked treats (check out my go-to recipe here courtesy of Jamie O)
